Alfajorcitos Limenos

Flaky shortbread cookie sandwiches filled with Manjar Blanco or Dulce de Leche

Ingredients
  

  • 1 Cup All purpose flour
  • 1 Cup Corn starch
  • 1 Cup Confectioners sugar
  • 125 grs Butter
  • ¼ Tsp Salt
  • 1 Tbsp Brandy
  • 1 Tbsp Cold water
  • 1 Can Dulce de Leche

Instructions
 

  • In a large bowl mix all the dry ingredients
  • Incorporate the butter cut into small pieces
  • Mix the butter until you get a sand like mixture
  • Add the brandy and the cold water
  • Mix well until you get a soft dough
  • Refrigerate for 30 minutes
  • Roll out the dough using a rolling pin
  • Cut out small circles, placing them in a baking sheet
  • Bake at 350°F between 15-18 minutes watching to not brown the edges
  • Let them cool completely.
  • Spread some Manjar Blanco or Dulce de Leche and make little sandwiches
  • Sprinkle some confectioners suggar on top and enjoy!
