Lomo a la Antigua

Tender pork loin baked with carrots, potatoes and apples.

Ingredients
  

  • 2 Lb Pork Loin
  • 2 tbsp vegetable oil
  • Salt
  • Pepper
  • 1 cup celery sticks
  • 1 onion cut into big squares
  • 1 cup carrots strips
  • 3 garlic
  • 2 Bay Leaves
  • 1 cup Apple Juice
  • 2 apples sliced
  • 2 potatoes sliced
  • Chopped cilantro

Instructions
 

  • Season the meat with salt and pepper
  • In a hot skillet coated with the vegetable oil seal the meat on both sides until a crust is formed, about 2 miutes per side. Making sure the lateral sides are sealed as well.

  • Add the onion and garlic. Half a cup of carrots and half cup of celery sticks
  • Sautee for a few minutes and transfer everything to a deep baking dish
  • Add the bay leaves
  • Incorporate the rest of the vegetables and the apple slices
  • Pour in the apple juice

  • Cover and bake 30 minutes at 550°F
  • Then lower the temperature to 385°F and cook for another 30 minutes.
  • Let it rest for 10 minutes covered before slicing it.

  • To make the sauce: Take some of the vegetables from the baking dish including apples and juice, blend with a tablespoon of butter.
  • Pour the sauce over the sliced pork loin.
