Season the meat with salt and pepper
In a hot skillet coated with the vegetable oil seal the meat on both sides until a crust is formed, about 2 miutes per side. Making sure the lateral sides are sealed as well.
Add the onion and garlic. Half a cup of carrots and half cup of celery sticks
Sautee for a few minutes and transfer everything to a deep baking dish
Add the bay leaves
Incorporate the rest of the vegetables and the apple slices
Pour in the apple juice
Cover and bake 30 minutes at 550°F
Then lower the temperature to 385°F and cook for another 30 minutes.
Let it rest for 10 minutes covered before slicing it.
To make the sauce: Take some of the vegetables from the baking dish including apples and juice, blend with a tablespoon of butter.
Pour the sauce over the sliced pork loin.
