Green Rice?
Arroz Verde is a dish made with poblano peppers and is a delicious alternative to present your favorite Mexican dishes.
One of the main questions people has about poblano peppers is – are they spicy?
And the answer is no, -for the most part-
Poblano peppers are usually mild, however once in a while you will find one with a little kick, but not at the level of a jalapeño.
It’s a Trilogy!
This dish is part of a series of three versions of the Mexican Rice, the classic Red Mexican Rice that you get at your favorite Mexican Restaurant and the colorful and flavorful Arroz Primavera

Rice can be tricky to accomplish however once you learn the proper technique, you will adopt the Mexican rice as your favorite side dish.
Time is precious!
When I was growing up Mom was alway busy, we had 2 disabled elder relatives living with us that require full attention
so basically she thought us how to cook in a hurry -literally- while she was either doing laundry or cooking the main dish
we assisted her with the prepping, stirring or washing dishes,
however many times we just sanded by her side watching pots and pans go from one place to another.
It’s funny how our biggest job sometimes was to simply watch the clock and run to get her when the time was up.
Having a reliable timer is so important for this dish, so make sure you find your “timer” and put it to work.
Arroz Verde -Mexican Style Green Rice
Ingredients
- 1 Cup White Rice Medium or Long grain
- 1 Poblano Pepper Cut into 8 pieces
- ¾ Inch Onion slice
- 1 Garlic clove
- 1 cup water
- 1 tsp salt
- ½ tsp Vegetal Seasoning
- 3 tbsp Vegetable Oil
Instructions
- Rinse and drain the rice. Set aside
- Put the poblano peppers, onion, garlic, cilantro, salt and water in the blender and mix until smooth
- In a deep saucepan pour the oil over medium heat.
- Add the rice and stir occasionally until it turns light golden in color
- Pour the blended mixture over the rice
- Let it simmer at medium heat for a few minutes
- Add the vegetal seasoning
- Once the liquid has absorbed half way through check the flavor, make sure its slightly salty to your taste, the salt will be absorbed and balanced out.
- Lower the heat to the minimum level and cover with a lid tight.
- Let it cook UNDISTURBED for 20 minutes.
- Do not peak
- Do not stir
- Leave it alone…
- seriously… walk away!!
- After 20 minutes uncover and fluff with a fork.
- Cover and let it rest 5 more minutes.
- Serve and enjoy!
